Welsh Cakes



  • 450 self raising flour
  • 170 sugar
  • 250 butter
  • 2 eggs
  • 170 Currants
  • 1/2 tsp mixed spice



  1. Rub together the butter, spice, sugar & flour until it resembles wet sand.

  2. Add the eggs to the bowl and mix together until it's just combined.

  3. Lightly flour a surface and roll out the dough. Cut it with a 6cm cutter.

  4. Heat a non stick frying on on a medium heat and add a little bit of butter just to cover the bottom of the pan.

  5. Cook  3-4mins each side until golden brown and cooked through.
