- 450 self raising flour
- 170 sugar
- 250 butter
- 2 eggs
- 170 Currants
- 1/2 tsp mixed spice
Rub together the butter, spice, sugar & flour until it resembles wet sand.
Add the eggs to the bowl and mix together until it's just combined.
Lightly flour a surface and roll out the dough. Cut it with a 6cm cutter.
Heat a non stick frying on on a medium heat and add a little bit of butter just to cover the bottom of the pan.
Cook 3-4mins each side until golden brown and cooked through.
