Breakfast Recipe Ideas

Muesli

It's great to be in control of what goes in your breakfast cereal, and thsi recipe allows you todo just that. For a soft and creamy breakfast, combine equal amounts of this muesli with yoghurt and leave to soak overnight.

Preparation 20 minutes, serves 6.

200g rolled oats

75g Bran flakes

40g wheatgerm

75g dried apricots,chopped

75g dried cherries

75g sultanas

40g desiccated coconut

75g hazelnuts, toasted and chopped

75g pecans, chopped

25g sunflower seeds

Put all the ingrediants in an air tight container and mix well togeather.

 

Dairy Porridge

Packed with goodness, this is great for growing children.

Preparation 5 minutes and overnight soaking

cooking 8 minutes

serves 4

125g rolled oats

1 litre milk

Place the milk and oats in a non-stick saucepan. Stir, cover and leave in a cool place overnight.  The next day bring to the boil, stirring constantly, and simmer for 1 minute. Adjust the consistency with a little more milk if necessary, and serve.

 

Oat and Apple Muffins

Muffins are some of the easiest cakes to make and they are perfect for lunch-box fillers. they're also very good served warm for breakfast- simply pop into the mircowave for about 20 seconds. Muffins are the best eaten fresh within 24 hours of baking, or frozen on the day they are made. Make 12.

 

125g plain white flour

125g wholemeal plain flour

1 tablespoon of baking powder

50g medium oatmeal

50g light muscovado sugar

3 small dessert apples, peeled, cored and diced

50g sultabnas or raisons

50g unsalted butter, melted and cooled slightly

150ml yoghurt

150ml milk

1 egg

5 tablespoons of clear honey

a little extra oatmeal for dusting.

 

 

Line a 12-hole muffin tray or deep bun tin with paper muffin cases. Mix the flour, baking powder, oatmeal and sugar in a bowl. Stir in the chopped apples and sultanas or raisins. In another bowl, beat togeather the butter, yoghurt, milk, egg and honey. Add this mixture to the dry ingrediants and stir quickly and breifly until just incorporated; do not over-mix.

Divide the mixture between the paper cases and sprinkle with a little extra oatmeal. Bake in a pre-heated oven at 200 0c gas mark 6 for 18-20 minutes until just firm to the touch. Transfer to a wire rack to cool. Pop the cold muffins into a lunch box, or serve warm with stewed apple or plus; or low-sugar plum jam.
